Antipasti means 'before the meal'. It traditionally prepared the stomach with its' preserves in vinegar for the remainder of the huge meal. We think it is the most contemporary way of eating nowadays and very simple to make, it can be based purely on vegetables with a small frittata or with salumi (cured ham and sausage). Regionally it varies with preserved mushrooms and salumi in the North, and preserved vegetables and fish in the South.
