Ingredients
- 2 medium red onions
- 1 quart boiling water
- 3/4 cup rice wine vinegar
- 1/2 cup cold water
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon hot pepper flakes
Directions
- Slice onions into rings then peel away the skin.
- Separate rings and place them in a bowl.
- Pour boiling water over all and allow to sit for 3 minutes.
- Drain onions and return to the bowl.
- Immediately cover with vinegar and cold water.
- Add peppercorns and hot pepper.
- Cover and refrigerate for 1 hour before serving.
